  1. A day at Disney World

    My long-time friend Mike was in town this week and we had the fun chance to hit the Disney parks on Saturday. We headed straight to the Magic Kingdom early in the morning then hopped over to Disney’s Hollywood Studios in the afternoon. The weather was gorgeous! The crowds were manageable. And the fun was off the charts.

  4. Tiger-errific

    Ever since I was a little girl I have adored tigers, in particular bengal tigers. I don’t know how old I was, maybe 10 – 12 years old, I had a glow-in-the-dark velvet poster of a tiger hanging over my bed. Ah, those were the days. And – I ate Frosted Flakes for breakfast. (Please tell me you get the connection.)

    Today I was at Disney’s Animal Kingdom meeting up with someone I’ve had an online connection with, but hadn’t met in person yet. Allison from Texas and I have been communicating through Twitter and Facebook for several months and today we finally said hello – face-to-face.

    After spending time saying hello, I used the next 30 -minutes in the park (before my next conf. call) to head over to see my tiger friends.  Last time I was there I captured a great shot of one yawning.  I was hoping for the same spontaneous photo moment today. While the “action” shot didn’t happen, I still managed to take some great pictures of these magnificent beasts.

    Aren’t they just gorgeous creatures?  And to think I’m a dog person. Huh.

  6. Egg Grits Souffle

    I got this recipe from a recent edition of Parade Magazine. I changed it up just a little bit to suit my tastes.  This makes a wonderful breakfast souffle or high-protein meal for any time of day. Ingredients:
    • 1 cup reduced fat milk
    • 1/2 cup stone ground grits
    • 1 1/2 cups water
    • 5 eggs, separated
    • 1/4 cup grated parmesan cheese
    • 1/4 cup grated swiss cheese
    • seasoned salt (I prefer garlic salt)
    • ground pepper
    • dash of hot sauce (Tabasco sauce)
    Preheat oven to 425-degrees ——————————————— Combine water, milk in saucepan over medium low heat.  Slowly stir in grits as liquid warms.  Continue to cook over medium-low heat for 15 minutes until mixture thickens, then set aside. Beat or whisk the egg yolks in a bowl.  Gradually stir in some of the grit mixture to temper them, then slowly add yolk mixture to grits. Add in cheese and seasonings to grits/yolk mixture. In a separate bowl, beat the egg whites until stiff. Then gently fold into grit mixture.  Pour into a souffle dish and bake in center of oven for 30 minutes.   If you don’t have  a souffle dish, I used a bread pan, well greased. Yummy!!

  7. To Kill a Snake

    When a snake threatens my babies, it’s going to have to face me. And when I have to face a snake, nine times out of ten, t he snake is going to lose.

    Today I found a medium sized rust colored snake swimming around my pool.  The same pool where my dogs dive for balls and I dangle my feet in the water.  The snake must go. I hate it when snakes are in my pool. It makes is so much more difficult for me to come up with a killing plan. Today with the 14-inch (or more) snake slinking around I had to make decisions on what to do.  I could try to scoop it out with the net, but I worried it would slither up the pole and come at me.   So instead I used the net to bat at it a couple of times hoping to stun it, then scoop it and throw it out the back door.  But my plans changed. I was able to stun it by hitting it with the net, then I hit it with the blunt end of a big axe. I am not embarrassed or ashamed or the slightest bit guilty about killing snakes, rats, roaches and spiders.  I will kill a snake and did today.

    The reptile is in snake heaven tonight where he’s not threatening me or my dogs any more.
